Chicken Parmesan


Chicken Parmesan for two

Chicken Parmesan has been a favorite of my family for a long time. Recently Alex and I have been on an Italian kick and Chicken Parmesan is a delicious and easy meal. Even Alex can make it J


This meal can easily be prepared for more than two, just have the amount of chicken breast and ingredients necessary for the number of servings you desire.

Ingredients

2 skinless, boneless chicken breasts
2 eggs, beaten
1 cup of Italian seasoned bread crumbs
½ cup of Parmesan cheese
2 slices of Marble Jack cheese
2 tablespoons of olive oil
1 jar of pasta sauce

Directions

1.) Preheat oven to 375 degrees F (190 degrees C).

 2.) Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and breadcrumbs. Dip chicken breasts into beaten egg, then into breadcrumb mixture to coat.


3.) In a large skillet, heat oil over medium high heat. Add coated chicken and sauté for about 4 to 5 minutes each side.


4.) Place chicken into a lightly greased baking dish. Cover with tomato sauce. Wrap dish with aluminum foil and place in preheated over, cook for 20 minutes.


5.) After 20 minutes take the dish out of the oven and slowly and carefully remove the aluminum foil. Be careful for the hot steam. Place a piece of cheese on each piece of cheese, cook uncovered for 15 minutes. 


Then once the timer goes off it's all done! Now comes the best part, eating! I served it with bow-tie pasta and a Tomato Basil Pasta sauce. Pair nicely with a good Cabernet!
